These easy 3-ingredient cookies turn leftover Halloween candy into warm, chewy treats with pockets of melted chocolate and caramel. Perfect for using up your candy stash in under 20 minutes.

Ingredients

Scale
  • 1 box (15-16 oz) yellow or vanilla cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 1/2 to 2 cups assorted leftover Halloween candy, roughly chopped
  • 1/4 cup chocolate chips (optional)
  • Flaky sea salt (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare your candy: roughly chop leftover Halloween candy into pea-sized pieces. Set aside about 1/4 cup for topping.
  3. In a large mixing bowl, whisk together melted butter and eggs until well combined and slightly frothy (about 30 seconds). Add vanilla extract if using.
  4. Pour the entire box of cake mix into the bowl. Stir with a wooden spoon or rubber spatula until a soft, cohesive dough forms. Do not overmix.
  5. Gently fold the chopped candy into the dough, reserving the 1/4 cup for topping.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Press a few reserved candy pieces into the top of each dough ball.
  8. Bake for 10-12 minutes, until edges are light golden brown and centers are still soft and puffy.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Don’t overbake; cookies continue to cook on the hot sheet. Chill dough if too sticky. Avoid hard candies like lollipops. For best texture, use a mix of chocolate-based and chewy candies. Cookies taste even better the next day.
