This banana bread is incredibly moist and tender, thanks to a secret ingredient: sour cream. It’s a simple, one-bowl recipe that turns overripe bananas into a crowd-pleasing loaf with a rich, velvety crumb.

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • ½ cup full-fat sour cream
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the long sides.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add melted butter, sugar, eggs, sour cream, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  4. In a separate small bowl, whisk together flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet ingredients. Fold gently with a wooden spoon or spatula until just combined (a few streaks of flour are okay). Do not over-mix.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil after 40 minutes.
  8. Cool in the pan on a wire rack for 10 minutes, then lift out using the parchment paper and cool completely on the rack (about 1 hour) before slicing.

Notes

For best results, use very ripe bananas (heavily spotted or black). Room temperature ingredients blend more smoothly. Do not over-mix the batter to avoid a tough loaf. Let the bread cool completely before slicing to prevent it from falling apart.
