  • 1 cup grated zucchini (about 1 medium zucchini, squeezed dry)
  • 2 large eggs, room temperature
  • ยฝ cup (120g) plain Greek yogurt (or dairy-free coconut yogurt)
  • ยผ cup (60ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • ยฝ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Grate 1 medium zucchini (about 1 cup), then place it in a clean kitchen towel and squeeze out as much moisture as you can.
  3. In a large bowl, whisk together whole wheat flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  4. In a separate bowl, mash the ripe bananas thoroughly. Add eggs, Greek yogurt, honey or maple syrup, and vanilla extract. Whisk until combined.
  5. Fold the grated zucchini into the wet mixture gently.
  6. Slowly add the dry ingredients to the wet bowl, folding with a spatula just until no flour streaks remain. Avoid overmixing.
  7. Fold in chopped nuts if using.
  8. Scrape the batter evenly into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
