  • 2 cups pulled pork (homemade or store-bought, seasoned)
  • 2 cups shredded cheese blend (sharp cheddar and Monterey Jack)

  • 1 cup black beans, drained and rinsed (optional)
  • ½ small red onion, finely diced
  • A handful fresh cilantro, chopped
  • 2 green onions, sliced thin
  • Juice of 1 lime
  • Sour cream or crema for topping (optional)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the pulled pork with ground cumin, smoked paprika, salt, and pepper. Set aside.
  3. Line a large rimmed baking sheet with parchment paper.
  4. Spread a single, even layer of tortilla chips over the sheet pan without overlapping too much.
  5. Sprinkle half of the shredded cheese evenly over the chips.
  6. Scatter half of the seasoned pulled pork, black beans, diced red onion, and sliced pickled jalapeños over the cheese.
  7. Add the remaining cheese and pulled pork on top.
  8. Bake for 12-15 minutes until cheese is melted and bubbly and chip edges are golden and crispy.
  9. Remove from oven and garnish with chopped cilantro and sliced green onions.
  10. Add dollops of sour cream and a generous squeeze of fresh lime juice.
