  • 1/2 cup (113g) unsalted butter, cut into cubes
  • 1/2 cup (120ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt
  • 23 pounds assorted Halloween candy
  • 1 cup (100g) pretzel sticks or pretzel twists
  • 2 large apples, sliced (Honeycrisp or Granny Smith)
  • 1/2 cup (60g) roasted salted almonds or pecans (optional)

Instructions

  1. Make the caramel dip: In a small saucepan over medium heat, combine the brown sugar and cubed butter. Stir constantly with a whisk until the butter is melted and the mixture is smooth, about 2 minutes.
  2. Slowly pour in the heavy cream while whisking continuously. Continue cooking for 3-4 minutes, until the caramel thickens slightly and coats the back of a spoon.
  3. Remove the pan from the heat. Stir in the vanilla extract and flaky sea salt. Let it cool for 5 minutes; it will thicken more as it sits. Pour into a serving bowl and set aside.
  4. Prepare the board: Place the bowl of warm caramel dip in the center of a large wooden board or platter. Arrange larger items like apple slices and pretzel sticks around the bowl.
  5. Group similar candies together for visual appeal. Place chocolate bars in one cluster, gummies in another, sour candies in a third. Leave small gaps between groups.
  6. Fill any bare spots with nuts or smaller candies. Sprinkle a few extra flakes of sea salt over the apple slices.
  7. Serve immediately with small plates and napkins. If the caramel cools, microwave it for 15 seconds before serving.

Notes

Make the caramel dip up to 3 days ahead and store in the fridge. Reheat gently before serving. For a dairy-free version, use vegan butter and full-fat coconut cream. To keep apple slices from browning, toss them in a mixture of 1 tablespoon lemon juice and 1 cup water.
