Ingredients

Scale
  • 2 cups (480 ml) apple cider
  • ยฝ cup (113 g) unsalted butter, softened
  • ยฝ cup (100 g) granulated sugar
  • ยฝ cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1ยพ cups (210 g) all-purpose flour
  • ยฝ teaspoon baking soda
  • ยฝ teaspoon baking powder
  • ยฝ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ยผ teaspoon ground nutmeg (optional)
  • 1ยฝ cups (180 g) powdered sugar
  • ยฝ teaspoon ground cinnamon (for glaze)
  • 2โ€“3 tablespoons (30โ€“45 ml) milk
  • ยฝ teaspoon vanilla extract (for glaze)

Instructions

  1. Reduce the apple cider: Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce to medium-low and simmer for 20โ€“25 minutes, stirring occasionally, until reduced to about ยผ cup. It should be dark amber and syrupy. Remove from heat and let cool completely.
  2. Preheat oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper or silicone mats.
  3. In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3 minutes with an electric mixer on medium speed. Scrape down sides as needed.
  4. Beat in the egg, vanilla extract, and cooled reduced cider until just combined. Do not overmix.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add dry ingredients to wet mixture, mixing on low speed or folding with a spatula until just combined.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  7. Using a 1ยฝ-tablespoon cookie scoop, drop rounded balls of dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10โ€“12 minutes, until edges are set and lightly golden. Centers should look slightly underdone. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. Make the glaze: In a small bowl, whisk together powdered sugar, ยฝ teaspoon cinnamon, 2 tablespoons milk, and ยฝ teaspoon vanilla. Add more milk if needed to reach a thick but pourable consistency.
  9. Once cookies are completely cool, drizzle glaze over them using a spoon or small whisk. Let glaze set for 15โ€“20 minutes before serving.

Notes

Chill the dough thoroughly for at least 30 minutes to prevent flat cookies. Reduce the cider slowly to avoid burning. For best texture, do not overbake; cookies should be soft in the center when removed from oven. Glaze only when cookies are completely cool.
