  • 34 pounds chuck roast, well-marbled
  • 1 packet (about 1/4 cup) ranch seasoning mix (e.g., Hidden Valley)
  • 1 packet au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 jar (7-10) pepperoncini peppers plus 1/4 cup pepperoncini juice
  • 1/2 cup beef broth (optional)
  • Fresh cracked black pepper, to taste

Instructions

  1. Trim excess fat from the chuck roast and pat dry with paper towels (about 5 minutes).
  2. Sprinkle ranch seasoning mix and au jus gravy mix evenly over all sides of the roast. Add freshly cracked black pepper to taste (about 5 minutes).
  3. Place the roast in the slow cooker and lay the softened butter on top (about 2 minutes).
  4. Scatter the whole pepperoncini peppers around the roast and pour 1/4 cup of the pepperoncini juice over everything (about 2 minutes).
  5. Optionally, pour 1/2 cup beef broth around the edges without washing off the seasoning.
  6. Cover and cook on low for 8 hours or on high for about 5 hours until the roast is fork-tender.
  7. Check tenderness after 8 hours; if not falling apart, cook for an additional hour (1-2 minutes).
  8. Remove the roast and shred with two forks in the slow cooker juices. Spoon pepperoncini peppers over the top and serve (about 5 minutes).

Notes

Keep the slow cooker lid closed during cooking to maintain heat and moisture. Butter adds richness and moisture; if omitted, the roast may be less tender. To thicken sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into juices, cooking on high for 10-15 minutes. For dairy-free, substitute butter with olive oil or dairy-free butter and use dairy-free ranch seasoning. For gluten-free, verify seasoning mixes or make your own.
