  • 1/2 cup shredded carrots
  • 1/3 cup crumbled blue cheese
  • 1/4 cup mayonnaise (full-fat recommended)
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and freshly ground black pepper, to taste
  • 12 slider buns (soft, slightly sweet brioche-style recommended)
  • Optional: sliced pickles or fresh parsley for garnish

Instructions

  1. Place the chicken breasts in a medium saucepan and cover with water. Add a pinch of salt and bring to a simmer over medium heat. Cover and cook for 15-18 minutes until chicken is cooked through (internal temperature 165°F / 74°C). Drain and let cool slightly.
  2. Using two forks or shredding claws, pull the chicken breasts apart into bite-sized shreds. Place shredded chicken in a large bowl.
  3. In a small saucepan, melt the butter over low heat. Add buffalo wing sauce and garlic powder, stirring until smooth and warmed through. Pour the sauce over the shredded chicken and toss well to coat evenly.
  4. In a mixing bowl, combine shredded cabbage and carrots. In a separate smaller bowl, whisk together mayonnaise, sour cream, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture, then sprinkle in crumbled blue cheese. Toss gently until the slaw is evenly coated but the cheese remains chunky.
  5. Slice buns in half and toast lightly in a skillet or oven for 2-3 minutes until golden and slightly crisp.
  6. Spoon a generous portion of buffalo chicken onto the bottom half of each bun. Top with a heaping spoonful of blue cheese slaw. Add optional pickles or parsley if desired. Place the top bun on and press lightly.
  7. Serve immediately while the chicken is warm and the slaw is crisp and creamy.

Poaching chicken keeps it tender and juicy without extra calories. Use low heat when making buffalo sauce to avoid burning butter. Toast buns to prevent sogginess.
