Savory Bacon Cheeseburger Dip with Dill Pickle Chips and Pretzel Bites

A quick and easy party snack combining smoky bacon, sharp cheddar, tangy dill pickle chips, and soft pretzel bites for a crowd-pleasing, savory dip.

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 6 slices thick-cut bacon, cooked and crumbled
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup dill pickle chips, roughly chopped
  • 12 cups pretzel bites, for dipping

Instructions

  1. Cook 6 slices of thick-cut bacon in a skillet over medium heat until crispy, about 8-10 minutes. Remove bacon and drain on paper towels, leaving about 1 tablespoon of bacon fat in the pan.
  2. Add the finely diced onion to the skillet and sauté in the bacon fat until soft and translucent, about 4-5 minutes. Add minced garlic during the last 30 seconds to avoid burning.
  3. Preheat oven to 350°F (175°C).
  4. In a large bowl, combine softened cream cheese and sour cream. Blend until smooth and creamy.
  5. Fold in shredded sharp cheddar, shredded mozzarella, smoked paprika, salt, and black pepper. Mix gently to combine.
  6. Add crumbled bacon, sautéed onions, and garlic to the cheese mixture. Fold carefully to keep some bacon bits chunky.
  7. Fold in roughly chopped dill pickle chips.
  8. Spread the dip evenly into a greased 9-inch baking dish or oven-safe skillet. Optionally, sprinkle extra cheddar on top.
  9. Bake for 20-25 minutes until the top is golden and bubbly.
  10. Remove from oven and let sit for 5 minutes. Serve warm with pretzel bites.

Notes

For dairy-free, substitute cream cheese with plant-based alternative and sour cream with coconut yogurt. For gluten-free, use gluten-free crackers or veggie sticks instead of pretzel bites. Cook bacon slowly on medium heat to avoid burning. Freshly shredded cheese melts better than pre-shredded. If dip thickens when cooled, reheat gently before serving.
