A cool, refreshing summer dessert combining sweet watermelon with warm Moroccan spices and a delicate floral hint of rose water. Perfect for hot afternoons and summer gatherings.

Ingredients

Scale
  • 6 cups watermelon, cubed and seeds removed
  • 1/2 cup granulated sugar (100g)
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 tablespoon rose water
  • Pinch of salt
  • Optional: fresh mint leaves for garnish
  • Optional: orange blossom water (can substitute rose water)

Instructions

  1. Cut watermelon into cubes, removing seeds to yield about 6 cups (900g) of flesh.
  2. Place watermelon cubes in a blender or food processor and blend until smooth, about 1-2 minutes.
  3. Optional: Strain the puree through a fine mesh sieve for extra smoothness.
  4. Stir in sugar, ground cinnamon, ground ginger, lemon juice, and a pinch of salt until sugar dissolves, about 5 minutes.
  5. Add 1 tablespoon of rose water and stir gently.
  6. Pour mixture into a shallow freezer-safe dish and freeze.
  7. After 30 minutes, scrape the edges and surface with a fork to break up ice crystals.
  8. Repeat scraping every 30 minutes for 2-3 hours until granita is fully frozen and fluffy.
  9. Serve immediately, garnished with fresh mint if desired.

Notes

Use ripe, juicy watermelon for best flavor. Do not skip scraping to achieve fluffy texture. Rose water is potent; measure carefully to avoid soapy taste. Can substitute orange blossom water for rose water. Store leftovers in airtight container in freezer up to 3 days; re-fluff by scraping before serving.
