A quick and easy summer mocktail featuring grilled peaches, fresh mint, and a bourbon-flavored substitute for a refreshing, crowd-pleasing drink without alcohol.

  • 2 ripe peaches, halved and pitted
  • About 10 fresh mint leaves, plus extra for garnish
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons simple syrup
  • 1 teaspoon molasses mixed with a pinch of smoked paprika and a dash of vanilla extract (bourbon flavoring substitute)
  • 1 cup chilled sparkling water
  • Ice cubes as needed (preferably large cubes)
  • Optional: A splash of non-alcoholic bitters

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 375°F / 190°C).
  2. Place the peach halves cut side down on the grill. Grill for 3-4 minutes until grill marks appear and peaches soften slightly but don’t collapse.
  3. Remove peaches and let cool for about 5 minutes.
  4. Mash the grilled peaches in a mixing bowl using a muddler or wooden spoon to create a chunky puree.
  5. Add the fresh mint leaves to the peaches and gently muddle again to release the mint oils without tearing the leaves.
  6. Pour in the lemon juice, simple syrup, and bourbon flavoring substitute. Stir well to combine and adjust sweetness or acidity if needed.
  7. Add ice cubes to serving glasses to chill them.
  8. Divide the peach mixture evenly among the glasses, filling about halfway.
  9. Top each glass with chilled sparkling water to fill and stir gently once to combine.
  10. Garnish with a sprig of fresh mint and a wedge of grilled peach on the rim if desired.
  11. Serve immediately for best fizz and freshest taste.

Notes

If peaches aren’t very sweet, add more simple syrup or a drizzle of honey. For a thinner drink, add more sparkling water. Be gentle when muddling mint to avoid bitterness. If no grill is available, use a grill pan, cast iron skillet, or broiler. The bourbon flavor is mimicked with molasses, smoked paprika, and vanilla extract; for an alcoholic version, substitute with 1.5 oz bourbon.
