These Quick Spooky Eyeball Caprese Skewers are a fun, fast, and delicious Halloween appetizer that comes together in under 15 minutes. Creamy mozzarella, sweet cherry tomatoes, and fresh basil are transformed into creepy-cute eyeballs with a simple olive pupil and a drizzle of balsamic ‘blood.’

  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine), drained
  • 1 pint cherry tomatoes
  • 24–30 medium-sized fresh basil leaves
  • 2–3 tablespoons balsamic glaze (or balsamic reduction)
  • 1 small black olive (or caper), for the ‘pupil’
  • 1 tablespoon extra-virgin olive oil
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Drain the fresh mozzarella balls and pat them dry with a paper towel. Using a small melon baller or the back of a 1/4 teaspoon, gently press into the center of each ball to create a small, shallow indentation for the ‘pupil.’
  2. Slice the black olive into very thin rounds. Place a small piece of olive into the indentation on each mozzarella ball.
  3. Wash and dry the cherry tomatoes. Cut each tomato in half crosswise (through the equator).
  4. Assemble the skewers: Thread a basil leaf onto a toothpick, then a halved cherry tomato (cut-side facing outward), and finally a prepared mozzarella ‘eyeball’ (olive pupil facing outward). Push together gently.
  5. Arrange the skewers on a serving platter. Drizzle lightly with extra-virgin olive oil and balsamic glaze. Finish with a pinch of flaky sea salt and a crack of fresh black pepper.
  6. Serve immediately. For best results, assemble no more than 30 minutes before serving.

Notes

Dry the mozzarella thoroughly to prevent the basil from sliding off. The ‘pupil’ indentation is key for a 3D spooky effect. For a dramatic presentation, drizzle balsamic glaze in a zig-zag pattern over the platter. Prep components up to 24 hours in advance, but assemble no more than 30 minutes before serving.
