This quick and easy salsa verde uses green tomatoes roasted under high heat to create a smoky, tangy flavor. Ready in just 15 minutes, it’s perfect for weeknight dinners and uses simple ingredients you likely already have.

Ingredients

Scale
  • 1 pound green tomatoes (about 4 medium), quartered
  • 45 garlic cloves, peeled
  • ½ medium white onion, roughly chopped
  • 1 large jalapeño pepper, stem removed (seeds left in for heat)
  • ½ cup packed fresh cilantro, roughly chopped
  • 2 tablespoons fresh lime juice (about 1 lime)
  • ½ teaspoon kosher salt, plus more to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your broiler to high. Position the oven rack about 4-6 inches from the heating element.
  2. Prep the vegetables: Cut green tomatoes into quarters or thick wedges (about 1-inch pieces). Place on a baking sheet with whole garlic cloves and roughly chopped onion. Add the whole jalapeño (stem removed).
  3. Drizzle with olive oil and toss to coat. Spread in a single layer. Sprinkle with a pinch of salt.
  4. Broil for 6-8 minutes, watching closely, until tomatoes and onion have blackened spots and garlic is soft and golden.
  5. Flip everything with a spatula and broil for another 2-3 minutes until charred on both sides and tomatoes are soft.
  6. Let cool slightly for about 5 minutes.
  7. Transfer roasted vegetables to a food processor or blender. Add cilantro, lime juice, and ½ teaspoon salt. Pulse 4-5 times for chunky salsa, or blend for 10-15 seconds for smoother consistency.
  8. Taste and adjust seasoning with more salt, lime juice, or a pinch of sugar if needed. Blend briefly to incorporate.
  9. Serve immediately or refrigerate for later. Flavors improve after an hour or two.

Notes

Watch the broiler closely to avoid burning. Let roasted vegetables cool before blending to prevent pressure buildup. For best texture, pulse rather than blending continuously. Green tomatoes can vary in tartness; adjust with a pinch of sugar if needed. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
