This quick cranberry orange sauce with fresh ginger comes together in just 15 minutes using simple ingredients. It’s perfect for holidays, weeknights, and potlucks, with a bright, slightly spicy flavor that makes it a crowd-pleaser.

Ingredients

Scale
  • 12 ounces (340 g) fresh or frozen cranberries
  • ¾ cup (150 g) granulated sugar
  • ½ cup (120 ml) fresh orange juice
  • 1 tablespoon orange zest (from about 1 large orange)
  • 1 tablespoon fresh ginger, finely grated (about 1-inch piece)
  • ¼ cup (60 ml) water
  • Pinch of salt

Instructions

  1. Zest and juice your orange first. Wash the orange well, grate off 1 tablespoon of the bright orange outer layer (avoid the white pith), then cut the orange in half and squeeze out ½ cup of juice. Set both aside.
  2. Grate your fresh ginger. Peel a 1-inch piece of ginger with a spoon, then grate it on a microplane until you have about 1 tablespoon. Set aside.
  3. Combine everything in your saucepan. Add the cranberries, sugar, orange juice, orange zest, grated ginger, water, and a pinch of salt to a medium saucepan. Stir briefly.
  4. Bring it to a boil over medium-high heat. Cook for 3 to 4 minutes, stirring occasionally, until the sugar dissolves and the mixture starts to bubble.
  5. Reduce heat to medium-low and let it simmer for 8 to 10 minutes. Stir every minute or so. The cranberries will pop and the sauce will thicken.
  6. Watch for the right consistency. The sauce is done when most cranberries have burst and the liquid coats the back of a spoon. It will thicken more as it cools.
  7. Remove from heat and let it cool for about 5 minutes in the pan. For a smoother sauce, mash remaining whole berries with a spoon or use an immersion blender.
  8. Transfer to a serving dish or storage container. Let cool completely before covering and refrigerating. The sauce will keep for up to 2 weeks in the fridge.

Notes

The sauce tastes even better the next day as flavors meld. For a spiced version, add a cinnamon stick and two star anise while simmering. For a lower-sugar option, use ½ cup monk fruit sweetener blend. The sauce can be frozen for up to 3 months.
