This quick copycat Starbucks iced sugar cookie latte is a fast, easy, and delicious treat that captures the cozy, nostalgic flavor of the original without the drive-thru line or price tag. Made with simple ingredients like sugar cookie syrup, milk, and espresso, it’s perfect for a weeknight indulgence or a holiday gathering.

Ingredients

Scale
  • 1 cup (240 ml) milk (2% dairy, oat, or almond milk)
  • 2 tablespoons (30 ml) sugar cookie syrup (Torani recommended)
  • 1 shot (1 oz or 30 ml) espresso (or 2 oz strongly brewed coffee)
  • Ice cubes (enough to fill glass)
  • Whipped cream (optional, for topping)
  • Red and green sprinkles (optional, for topping)
  • Pinch of cinnamon or nutmeg (optional, for topping)

Instructions

  1. Brew your espresso (2 minutes). If using an espresso machine, pull one shot. If using a moka pot, fill bottom chamber with water up to the valve, add finely ground coffee, screw on top, and place on medium heat until gurgling (3-4 minutes). Set aside to cool slightly. If using strong brewed coffee, brew about 3 ounces and let cool for a minute.
  2. Combine the milk and syrup (1 minute). Pour 1 cup milk and 2 tablespoons sugar cookie syrup into a small jar or cocktail shaker. Screw lid on tightly and shake vigorously for about 15 seconds until slightly frothy and well combined.
  3. Fill your glass with ice (30 seconds). Add enough ice cubes to fill a tall glass about three-quarters full. Large cubes are preferred as they melt slower.
  4. Pour the milk mixture over the ice (10 seconds). Slowly pour the shaken milk and syrup mixture over the ice.
  5. Add the espresso (10 seconds). Gently pour the cooled espresso over the milk. Do not stir yet—the layers are part of the fun.
  6. Stir gently (10 seconds). Use a spoon to stir the drink from the bottom up to combine espresso with milk evenly. Taste and add more syrup if desired.
  7. Top and serve (30 seconds). If using, add a generous dollop of whipped cream on top. Sprinkle with red and green sprinkles or a pinch of cinnamon. Serve immediately with a straw or spoon.

Notes

Don’t skip the shaking step—it ensures the syrup is evenly distributed. Cool your espresso slightly before adding to prevent melting the ice too quickly. Use cold milk for best results. If the drink tastes watery, use less ice or a double shot of espresso. If too sweet, reduce syrup to 1.5 tablespoons.
