A cozy and festive pumpkin spice latte recipe topped with whimsical ghost foam art, perfect for chilly mornings or seasonal celebrations.

Ingredients

Scale
  • 2 shots (about 60 ml) espresso or ¾ cup (180 ml) brewed strong coffee
  • 1 cup (240 ml) milk of choice (whole milk recommended, oat milk for dairy-free)
  • 2 tablespoons (30 g) pumpkin puree (canned pumpkin, not pumpkin pie filling)
  • 1 to 2 tablespoons (1224 g) brown sugar (dark brown sugar preferred)
  • 1 teaspoon (2 g) pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • ½ teaspoon (2.5 ml) vanilla extract
  • Ground cinnamon for sprinkling on top
  • Optional: pinch of salt to balance sweetness or a splash of maple syrup instead of brown sugar
  • Optional for foam art: edible black food coloring or a tiny drop of espresso

Instructions

  1. Make the Pumpkin Spice Mixture (5 minutes): In a small saucepan over medium heat, combine pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract. Stir continuously until sugar dissolves and mixture is warm but not boiling.
  2. Prepare the Coffee (3-5 minutes): Brew espresso or strong coffee using preferred method. Pour hot coffee into a wide-rimmed mug. Add a pinch of salt if desired.
  3. Warm and Froth the Milk (5 minutes): Heat milk until about 140°F (60°C). Use a milk frother or steam wand to create rich, velvety foam. Alternatively, whisk vigorously if no frother is available.
  4. Combine Pumpkin Mixture and Coffee (1 minute): Pour warm pumpkin spice sauce into the mug with coffee and stir thoroughly.
  5. Pour Frothed Milk (1-2 minutes): Slowly pour frothed milk into the pumpkin-coffee mixture, holding back foam with a spoon. Spoon foam on top to create a smooth surface.
  6. Create Ghost Foam Art (5 minutes): Using a toothpick or latte art pen, draw a simple ghost shape by swirling the foam gently. Add eyes and mouth dots with edible black food coloring or espresso if desired.
  7. Finish with Cinnamon Sprinkle (30 seconds): Lightly dust ground cinnamon over the foam.

Notes

Do not overheat milk; aim for about 140°F (60°C) for best froth. Use fresh pumpkin pie spice for optimal flavor. Froth milk twice if foam is insufficient. Whisk pumpkin sauce continuously to avoid graininess. Practice ghost art slowly and gently. Store pumpkin-coffee mixture and milk foam separately if making ahead.
