  • 4 boneless, skinless chicken breasts or thighs (about 1.5 pounds / 700 grams)

Instructions

  1. Prepare the marinade: In a medium mixing bowl, whisk together olive oil, lemon juice, minced garlic, honey, Dijon mustard, rosemary, smoked paprika, salt, and black pepper until honey fully dissolves and ingredients are well combined (approx. 3 minutes).
  2. Pat dry the chicken breasts or thighs with paper towels to help the marinade stick better and promote even cooking (approx. 2 minutes).
  3. Place the chicken pieces in a large zip-top bag or shallow dish, pour the marinade over them, seal the bag or cover the dish, and gently massage the marinade into the chicken to coat all sides evenly. Refrigerate for 1 to 3 hours, no more than that to avoid mushy texture.
  4. Preheat the grill (charcoal, gas, or grill pan) to medium-high heat (about 400°F / 200°C). Clean and oil the grates to prevent sticking (approx. 10 minutes).
