Ingredients

  • Chicken pieces (breasts, thighs, or drumsticks; bone-in or boneless)
  • Olive oil (or neutral oil like avocado oil)
  • Salt
  • Black pepper
  • Optional herbs and spices: garlic powder, smoked paprika, thyme, rosemary
  • Optional lemon juice or zest

Instructions

  1. Preheat your grill to medium heat, about 350°F to 375°F (175°C to 190°C). Gas grills take 10-15 minutes, charcoal a bit longer.
  2. Pat chicken pieces dry with paper towels to help skin crisp up.
  3. Lightly brush chicken with olive oil, then season with salt, pepper, and optional herbs or spices.
  4. Place chicken on the grill skin-side down if applicable. Close the lid and cook undisturbed for 5-7 minutes to get a good sear and grill marks.
  5. Flip chicken using tongs and cook for another 5-7 minutes. If flames flare up, move chicken to a cooler part of the grill to avoid charring.
  6. Check internal temperature with a meat thermometer inserted into the thickest part (avoid bone). Chicken is safe at 165°F (74°C).
  7. Remove chicken from grill immediately once it reaches 165°F to prevent overcooking.
  8. Let chicken rest on a plate for 5 minutes to allow juices to redistribute before serving.

Notes

Use two-zone grilling for thicker cuts: sear on hot side, then move to cooler side to finish cooking. Always clean and preheat grill grates to prevent sticking. Rest chicken for 5 minutes after grilling to keep it juicy. Avoid opening the lid frequently to maintain temperature. Use a meat thermometer for best results.
