  • 3 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary or thyme
  • 1 tablespoon olive oil
  • Coarse sea salt or kosher salt, for seasoning
  • Freshly ground black pepper, to taste
  • Optional sides: baby potatoes or asparagus for roasting
  • Optional: lemon wedges for a light finish

Instructions

  1. Bring the steaks to room temperature about 20-30 minutes before cooking.
  2. Preheat your oven to 400°F (200°C) if finishing steaks in the oven.
  3. In a small bowl, combine softened butter, minced garlic, and finely chopped rosemary or thyme. Mix well and set aside.
  4. Season both sides of each filet generously with coarse salt and freshly ground black pepper.
  5. Heat a cast iron skillet over medium-high heat and add olive oil. Heat until oil shimmers but does not smoke.
  6. Place the filet mignons in the pan and sear undisturbed for 3-4 minutes per side until a deep brown crust forms. If steak sticks when flipping, wait 15-30 seconds more.
  7. Check doneness with a meat thermometer: 130°F (54°C) for medium-rare. If desired more done, finish in the oven for 5-7 minutes.
  8. Transfer steaks to a warm plate and spoon herb butter over the top. Let rest for at least 5 minutes to redistribute juices.
  9. Optional: While steaks rest, roast asparagus or baby potatoes seasoned with olive oil, salt, and pepper.

Notes

Pat steaks dry before seasoning to ensure a good sear. Do not overcrowd the pan. Use tongs to flip steaks to avoid piercing and losing juices. Rest steaks after cooking for juicy results. Butter baste during cooking for extra flavor and shine. If finishing in oven, preheat oven to 400°F. For dairy-free option, substitute herb butter with garlic-infused olive oil or dairy-free butter.
