  • 4 ounces brie cheese, rind left on, cut into ½-inch cubes
  • ⅓ cup whole berry cranberry sauce
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface and unfold the thawed puff pastry sheet. Roll out slightly to about ⅛ inch thick.
  3. Cut the pastry into 9 equal squares (about 3 inches each).
  4. Place squares on prepared baking sheet, spaced about 1 inch apart.
  5. Place about 1 teaspoon of cranberry sauce in the center of each square.
  6. Top cranberry with 2-3 small cubes of brie.
  7. Fold the corners of each square toward the center, pinching gently to seal into a bundle.
  8. Brush each bundle with egg wash.
  9. Sprinkle with flaky sea salt and fresh rosemary (if using).
  10. Bake for 15-18 minutes, until pastry is puffed and deeply golden.
  11. Let cool on baking sheet for exactly 5 minutes.
  12. Transfer to a serving platter and serve warm.

Keep puff pastry cold for best flakiness. Do not overfill. The rind on brie should remain on for structure. Egg wash twice for a deeper golden color. Let cool exactly 5 minutes before serving.
