One-Pot Kielbasa and White Bean Soup

A quick, comforting, and easy one-pot dinner made with smoked kielbasa, white beans, and spinach. Perfect for busy weeknights when you need a satisfying meal in under 30 minutes.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 package (approx. 12-14 oz) smoked kielbasa, sliced into half-moon pieces
  • 1 can (15 oz) white beans (Cannellini or Great Northern), drained and rinsed
  • 4 cups chicken or vegetable broth (low-sodium recommended)
  • 1/2 teaspoon dried thyme
  • 4 cups fresh baby spinach
  • 1 teaspoon lemon juice
  • Black pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Prep the ingredients: Dice the onion, mince the garlic, slice the kielbasa, and drain/rinse the white beans.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onions and a pinch of salt; cook until translucent (about 3 minutes).
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add sliced kielbasa to the pot and cook, stirring occasionally, until browned and oils are released (about 4 minutes).
  5. Pour in the broth, scraping the bottom of the pot to release browned bits. Add the rinsed white beans and dried thyme.
  6. Bring to a boil, then reduce heat to low. Simmer uncovered for 10 minutes to allow flavors to meld.
  7. Stir in fresh spinach and cook until wilted (about 1 minute).
  8. Remove from heat. Season with black pepper, red pepper flakes, and a splash of lemon juice. Serve hot with crusty bread.

Notes

Rinsing canned beans removes excess sodium and starchy liquid. Kielbasa is naturally salty, so taste before adding extra salt. For a vegetarian version, swap kielbasa for smoked paprika and extra beans. If using a slow cooker, sauté aromatics and sausage first, then cook on low for 6-8 hours.
