One-Pan Garlic Butter Chicken & Broccoli: Easy 30-Min Dinner

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cups fresh broccoli florets
  • 4 tablespoons unsalted butter, divided
  • 56 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels and cut into 1-inch bite-sized pieces. Season generously with salt and black pepper. Cut the broccoli into small florets, about the same size as the chicken pieces.
  2. Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Let the butter melt and start to foam, but not brown.
  3. Add the seasoned chicken pieces to the hot pan in a single layer. Cook undisturbed for 4-5 minutes until the bottom is deep golden brown. Flip and cook for another 3-4 minutes until cooked through (internal temperature 165ยฐF). Remove chicken from the pan and set aside.
  4. In the same pan, add the remaining 1 tablespoon butter. Once melted, add the broccoli florets. Sautรฉ for 2-3 minutes, stirring occasionally, until bright green and slightly charred. Add a splash of chicken broth if the pan looks dry.
  5. Push the broccoli to the sides of the pan and add the minced garlic to the center. Sautรฉ for about 30 seconds until fragrant. Stir the garlic into the broccoli.
  6. Pour in the 1/4 cup chicken broth and use a wooden spoon to scrape up the browned bits from the bottom of the pan. Let simmer for about 1 minute.
  7. Return the cooked chicken to the pan along with any accumulated juices. Add the remaining 2 tablespoons butter, red pepper flakes (if using), and lemon juice. Toss everything together until the butter is melted and the chicken and broccoli are coated in the sauce.
  8. Taste and adjust seasoning with more salt and pepper if needed. Sprinkle with fresh parsley and serve immediately.

Notes

Pat the chicken dry for a good sear. Don’t overcrowd the pan. Add garlic last to prevent burning. Deglaze with broth for extra flavor. Squeeze lemon juice at the end to brighten the dish.
