  • 1 1/2 cups (300 g) granulated sugar
  • 3 large eggs, room temperature
  • 2 1/2 cups (310 g) all-purpose flour
  • 1 teaspoon baking powder

  • Zest of 2 medium lemons
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) wild huckleberries, fresh or frozen (thawed and drained)
  • 1/2 cup (120 ml) sour cream or Greek yogurt

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease your 9×5-inch loaf pan well; line it with parchment paper for easier removal.
  2. In a large bowl, beat the softened unsalted butter with granulated sugar until light and fluffy, about 4-5 minutes.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Add lemon zest, lemon juice, and vanilla extract to the mixture and blend well.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Add the dry ingredients to the wet mixture in three parts, alternating with sour cream or Greek yogurt, starting and ending with the dry ingredients. Mix gently after each addition.
  7. Carefully fold in the wild huckleberries, ensuring they are evenly distributed but not crushed.
  8. Pour the batter into the prepared loaf pan and smooth the top. Tap the pan gently to release air bubbles.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 40 minutes if the top browns too quickly.
  10. Let the cake cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

If batter is too thick, add a splash of milk or lemon juice to loosen. Do not skip sour cream as it adds moisture and tang. Toss berries lightly in flour before folding to prevent sinking. Use an oven thermometer for accurate baking temperature. Tent with foil if top browns too quickly.
