  • 23 lbs Pork Shoulder (Boston Butt), trimmed
  • 12 oz Dark Lager (or stout/porter)
  • 1 large Yellow Onion, diced
  • 4 Garlic Cloves, minced
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 cup Beef Broth (low-sodium)
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Brown Sugar
  • Salt and Black Pepper, to taste
  • 2 large bags Thinly Cut Tortilla Chips
  • 2 cups Shredded Cheddar Cheese
  • 2 Jalapenos, sliced
  • 1 can Black Beans, rinsed and drained
  • 1 cup Corn Kernels
  • 4 Green Onions, sliced
  • 1/2 cup Cilantro, chopped
  • 2 Avocados, diced
  • 2 medium Tomatoes, diced
  • 1 cup Sour Cream
  • 1/2 cup Green Chile Sauce
  • 1 cup Salsa

Instructions

  1. Season pork shoulder generously with salt, pepper, smoked paprika, cumin, and chili powder.
  2. Heat oil in a Dutch oven over medium-high heat and sear pork on all sides until deeply browned (3-4 minutes per side). Remove pork and set aside.
  3. In the same pot, sautรฉ diced onions until soft and translucent (5 minutes). Add minced garlic and cook for 1 minute.
  4. Pour in beer, scraping up browned bits. Add beef broth, apple cider vinegar, and brown sugar. Bring to a boil, then reduce heat to low.
  5. Return pork to the pot, submerging it in liquid. Cover and braise gently for 2-3 hours, turning halfway, until fork-tender.
  6. Remove pork and let rest for 10 minutes. Shred using two forks.
  7. Strain braising liquid, discarding onions, and reduce in a separate pan until thick and syrupy. Mix sauce back into shredded pork.
  8. Preheat oven to 350ยฐF (175ยฐC) if baking.
  9. Spread a layer of tortilla chips on a serving platter. Sprinkle half the cheese over chips.
  10. Top with pulled pork, black beans, corn, and jalapenos. Sprinkle remaining cheese on top.
  11. Bake for 5-10 minutes until cheese is melted and bubbly (optional).
  12. Dice avocados and tomatoes; slice green onions and chop cilantro.
  13. Mix sour cream with green chile sauce.
  14. Top warm nachos with fresh avocados, tomatoes, green onions, and cilantro. Drizzle with sour cream mixture and salsa. Serve immediately.

Notes

For a faster version, use pre-cooked pork and skip the braising step. To keep chips crisp, assemble just before serving. Leftover pork can be frozen separately from the chips. If avoiding alcohol, substitute beer with beef broth and a splash of apple cider vinegar.
