  • 2 1/4 teaspoons (one packet) active dry yeast
  • 1 1/2 cups (355ml) warm water
  • 2 tablespoons brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon fine sea salt
  • 1/2 cup baking soda (for the bath)
  • Coarse sea salt, for sprinkling
  • 8 ounces (225g) sharp cheddar cheese, freshly shredded
  • 1 cup (240ml) German beer (dark lager or ale)
  • 2 tablespoons butter (for cheese sauce)
  • 2 tablespoons all-purpose flour (for cheese sauce)
  • 1/2 cup (120ml) whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup (60ml) whole grain mustard
  • 1 tablespoon honey
  • 2 tablespoons mayonnaise
  • 1 teaspoon apple cider vinegar
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine warm water and brown sugar. Sprinkle yeast over the top and let sit for 5 minutes until foamy.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining 2 cups of flour, one cup at a time, stirring until dough comes together.
  3. Turn dough out onto a lightly floured surface. Knead for 6-8 minutes until smooth and elastic.
  4. Place dough in a lightly greased bowl, cover with a kitchen towel, and let rise in a warm spot for 1 hour until doubled in size.
  5. Punch down dough and divide into 4 equal pieces. Roll each piece into a 1-inch thick rope, then cut into 1-inch pieces.
  6. Bring a large pot of water to a boil. Carefully add baking soda. Boil pretzel bites in batches of 8-10 for 30 seconds per side. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  7. Preheat oven to 450ยฐF (230ยฐC). Brush boiled pretzel bites with melted butter and sprinkle with coarse sea salt. Bake for 12-15 minutes until deep golden brown.
  8. While pretzels bake, make cheese sauce: Melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in beer and milk, whisking continuously. Cook for 2-3 minutes until thickened. Reduce heat to low and add shredded cheese a handful at a time, stirring until melted. Stir in Dijon mustard, garlic powder, salt, and pepper. Keep warm.
  9. Make mustard dip: In a small bowl, whisk together whole grain mustard, honey, mayonnaise, apple cider vinegar, and a pinch of salt.
  10. Serve warm pretzel bites with both dipping sauces.

Notes

Do not skip the baking soda bathโ€”it gives pretzels their signature brown crust. Shred your own cheese for a smooth sauce. Use room temperature ingredients for best results. Keep cheese sauce warm over low heat. For freezing, freeze unbaked pretzel bites after the baking soda bath; bake from frozen at 450ยฐF for 15-18 minutes.
