  • Carrots, peeled and chopped
  • Zucchini, chopped
  • Red bell pepper, seeded and chopped
  • Onion, chopped
  • Garlic cloves, minced
  • 1 (14-ounce) can crushed tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • Pinch of black pepper
  • Shredded mozzarella cheese
  • Optional toppings: sliced olives, pepperoni, fresh basil leaves

Instructions

  1. Chop the carrots, zucchini, red bell pepper, onion, and garlic into small pieces.
  2. Heat 2 tablespoons of olive oil in a medium skillet over medium heat. Add onions and garlic and cook for 2-3 minutes until fragrant.
  3. Add carrots, zucchini, and bell pepper. Cook for 7-8 minutes until softened and slightly caramelized, stirring occasionally.
  4. Pour in the crushed tomatoes. Stir in Italian seasoning, salt, and black pepper. Simmer for 10 minutes until sauce thickens, stirring occasionally.
  5. Transfer sauce to a blender or food processor and pulse until smooth. Add water or broth if too thick. Adjust seasoning to taste.
  6. Preheat oven to 375°F (190°C). Slice mini bagels in half horizontally and place cut side up on a baking sheet.
  7. Spread about 2 tablespoons of hidden veggie sauce evenly over each bagel half.
  8. Sprinkle shredded mozzarella cheese over the sauce and add optional toppings if desired.
  9. Bake for 10-12 minutes until cheese is bubbly and golden. Watch carefully to avoid burning.
  10. Let cool for a few minutes before packing or serving.
