Instructions

  1. Prep the veggies: Wash and finely chop the bell peppers, zucchini, spinach, cherry tomatoes, and onion. Mince the garlic.
  2. Beat the egg whites lightly in a mixing bowl until just frothy but not stiff.
  3. Heat olive oil over medium heat in a non-stick skillet. Add chopped onion and garlic, sautรฉ until softened and fragrant but not browned.
  4. Add bell peppers and zucchini; cook until they start to soften and release moisture. Then add spinach and cherry tomatoes, cooking until spinach wilts.
  5. Lower heat to medium-low. Pour beaten egg whites evenly over the sautรฉed veggies. Let sit without stirring for about 30 seconds until edges start to set.
  6. Gently fold the egg whites over the veggies with a spatula, creating soft curds. Continue cooking until no visible liquid remains but eggs stay soft and tender.
  7. Season with salt, pepper, and red pepper flakes if using. Stir in fresh herbs.
  8. Serve immediately while warm.
