  • ½ cup plain Greek yogurt (full-fat or 2%)
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • ½ cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease each cup.
  2. In a large bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth and creamy.
  3. In a separate medium bowl, whisk together whole wheat flour, baking soda, baking powder, salt, and pumpkin pie spice until no lumps remain.
  4. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined—do not overmix. If using chocolate chips or nuts, fold them in at this stage.
  5. Divide batter evenly among the 12 muffin cups, filling each about ¾ full.
  6. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tops should be golden brown and spring back when touched.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter—a few lumps are fine. Room temperature ingredients help the batter come together smoothly. For gluten-free, use a 1:1 gluten-free baking blend. For vegan, use flax eggs and dairy-free yogurt. Muffins stay fresh at room temperature for up to 3 days or freeze for up to 3 months.
