  • 2 cups (480 ml) Greek yogurt, full-fat or low-fat, plain
  • 1/2 cup (125 g) natural peanut butter, smooth or crunchy
  • 1 medium ripe banana, mashed
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (15 g) chia seeds (optional)
  • 1/4 cup (45 g) dark chocolate chips or cacao nibs (optional)
  • A pinch of sea salt

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper.
  2. Mash the ripe banana in a medium bowl with a fork until mostly smooth with a few small lumps.
  3. Add Greek yogurt, peanut butter, honey (if using), and vanilla extract to the mashed banana and stir until creamy and uniform.
  4. Fold in chia seeds and chocolate chips or cacao nibs gently to distribute evenly.
  5. Spread the mixture evenly on the lined baking sheet to about 1/4 inch (0.6 cm) thickness.
  6. Lightly sprinkle a pinch of sea salt on top.
  7. Freeze the tray for at least 3 hours or preferably overnight until firm.
  8. Once frozen, lift the bark from the parchment and break into bite-sized pieces.
  9. Store extras in an airtight container or freezer bag in the freezer.

Notes

Use thick, full-fat Greek yogurt for best texture. Riper bananas add natural sweetness and help bind the bark. Spread mixture evenly to avoid uneven freezing. Freeze at least 3 hours or overnight for best firmness. Let sit 5 minutes at room temperature before eating if too hard. Store in single layer with parchment paper between layers if stacking.
