  • 12 tablespoons honey or maple syrup (optional)
  • Chia seeds or crushed nuts (optional)

Instructions

  1. Slice the watermelon into 1-inch thick rounds about 8 inches in diameter. Trim off the rind carefully to leave just the pink flesh as the pizza crust.
  2. Rinse mixed berries gently under cold water and pat dry. Slice larger strawberries into halves or quarters. Optionally toss berries with a teaspoon of honey and chopped mint.
  3. Spread a generous ½ inch thick layer of Greek yogurt evenly over the watermelon slice.
  4. Scatter the prepared berries evenly over the yogurt layer.
  5. Sprinkle chopped fresh mint leaves and optional chia seeds or crushed nuts on top. Drizzle with honey or maple syrup if desired.
  6. Serve immediately for best freshness. If prepping ahead, cover and refrigerate for up to 1 hour and let sit at room temperature for 10 minutes before serving.
