A refreshing and simple summer drink combining fresh watermelon, lime, and a spicy Tajín rim for a perfect balance of sweet, tart, and spicy flavors.

  • 4 cups (600g) diced seedless watermelon chunks
  • 2 tablespoons freshly squeezed lime juice
  • 1 cup (240ml) cold water
  • 12 tablespoons agave nectar or honey (optional)
  • 2 tablespoons Tajín seasoning (for rimming the glass)
  • A pinch of salt
  • Optional: Fresh mint leaves for garnish or blending
  • Optional: Chili powder to mix with Tajín for extra heat

Instructions

  1. Pour the Tajín seasoning onto a small plate. Rub a lime wedge around the rim of each glass to moisten it, then dip the rim gently into the Tajín, twisting slightly to coat evenly. Set aside to dry.
  2. Remove the rind and cut about 4 cups (600g) of seedless watermelon into chunks.
  3. In a blender, add the watermelon chunks, 1 cup (240ml) cold water, 2 tablespoons fresh lime juice, a pinch of salt, and 1-2 tablespoons agave nectar or honey if using. Blend on high for about 30 seconds until smooth.
  4. Optional: Pour the blended mixture through a fine mesh strainer into a pitcher to remove pulp.
  5. Refrigerate the agua fresca for at least 30 minutes to chill and let flavors meld.
  6. Pour the chilled agua fresca into the prepared Tajín-rimmed glasses. Add ice cubes if desired, garnish with a lime wedge or fresh mint leaf, and serve immediately.

Notes

Use ripe, juicy watermelon for best flavor. Adjust sweetness based on watermelon sweetness. Rim glasses with lime juice before Tajín for best adhesion. Straining is optional for a smoother drink. Make ahead by chilling but rim glasses just before serving. Tajín contains chili and salt, so consider sodium intake.
