Fresh Grilled Peach Arugula Salad with Prosciutto and Honey Balsamic Dressing

A perfect summer salad featuring smoky grilled peaches, peppery arugula, salty prosciutto, and a sweet-tangy honey balsamic dressing. Ready in under 20 minutes, this fresh and vibrant salad is a crowd-pleaser.

  • 3 ripe but firm fresh peaches, halved and pitted
  • 5 cups packed arugula leaves
  • 6 ounces thinly sliced prosciutto
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons pure honey
  • 2 tablespoons aged balsamic vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup toasted pine nuts or walnuts

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 375ยฐF).
  2. Rinse and halve the peaches, removing the pits. Brush each half lightly with olive oil.
  3. Place peaches cut side down on the grill. Grill for 3-4 minutes until char marks appear and fruit softens slightly. Flip and grill skin side for another 2 minutes. Avoid overcooking.
  4. In a small bowl or jar, whisk together balsamic vinegar, honey, lemon juice, and 1 tablespoon olive oil. Season with salt and pepper to taste.
  5. In a large bowl, toss arugula with half of the dressing.
  6. Slice grilled peaches into wedges and add on top of the arugula.
  7. Drape prosciutto over the salad.
  8. Sprinkle toasted pine nuts or walnuts if using.
  9. Drizzle remaining dressing over the salad and toss gently if desired.
  10. Serve immediately while peaches are still warm.

Notes

Use firm but ripe peaches to prevent them from falling apart on the grill. Brush peaches with olive oil to avoid sticking and encourage caramelization. Do not overcrowd the grill to ensure even cooking. Make dressing fresh before serving to keep flavors bright. Handle prosciutto gently to avoid tearing. Serve salad immediately for best flavor and texture.
