  • 1 medium fresh pineapple, peeled, cored, and sliced into ½-inch rings or wedges
  • ¼ cup (50g) packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh lime juice (optional)
  • A pinch of salt

Instructions

  1. Peel and core the pineapple, then slice into ½-inch (1.3 cm) thick rings or wedges, aiming for uniform pieces.
  2. In a mixing bowl, combine ¼ cup brown sugar, 1 teaspoon ground cinnamon, and a pinch of salt. Melt 2 tablespoons unsalted butter and add it along with 1 tablespoon fresh lime juice if using. Stir until smooth and well blended.
  3. Add the pineapple slices to the bowl and gently toss to coat each piece evenly with the cinnamon-brown sugar mixture. Let them sit for 5 minutes to absorb flavors.
  4. Preheat the grill to medium-high (about 400°F or 200°C). Clean and lightly oil the grates to prevent sticking.
  5. Place the coated pineapple slices on the grill. Cook for 3–4 minutes per side, or until caramelized grill marks appear and the pineapple is tender but not mushy. Flip carefully with tongs.
  6. Remove from grill and serve immediately. Optionally, sprinkle with extra cinnamon or a squeeze of fresh lime juice.

Notes

If dairy-free, substitute butter with coconut oil or neutral vegetable oil. Watch grill heat carefully to prevent sugar burning. Use a grill pan or broiler if no grill is available. For a spicy twist, add cayenne or chili powder. Fresh pineapple is best for grilling.
