  • 3 medium ripe bananas, mashed
  • 1/2 cup (113g) unsalted butter, browned and slightly cooled
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup (80ml) tahini, well stirred
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. Brown the butter in a small saucepan over medium heat, swirling occasionally until nutty and caramelized, about 5 minutes. Remove from heat and cool slightly.
  3. In a large bowl, mash the ripe bananas with a fork or potato masher until mostly smooth with some lumps.
  4. Add granulated sugar and brown sugar to the bananas. Whisk in eggs one at a time until combined. Stir in vanilla extract and cooled brown butter.
  5. In a separate bowl, sift together flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined. Avoid overmixing.
  7. Spoon half of the batter into the loaf pan. Drop dollops of tahini over the batter, then spread the remaining banana batter on top. Use a knife or skewer to swirl the tahini through the batter.
  8. Sprinkle toasted sesame seeds evenly over the top.
  9. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick into the center. It should come out with a few moist crumbs but no wet batter.
  10. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Watch the butter closely when browning to avoid burning. Let the brown butter cool before mixing with eggs to prevent cooking them. Toast sesame seeds in a dry skillet over medium heat for 2-3 minutes, stirring constantly. Tent the loaf with foil if sesame seeds brown too quickly during baking. Use ripe bananas with brown spots for best sweetness and moisture. Avoid overmixing the batter to keep the bread tender.
