Instructions

  1. Wash, peel, and dice about 3 cups of fresh peaches.
  2. Slice the vanilla bean lengthwise and scrape out the seeds.
  3. In a heavy-bottomed saucepan, combine peaches, sugar, lemon juice, bourbon, vanilla seeds, and the vanilla pod.
  4. Over medium heat, stir until sugar dissolves, about 5 minutes, watching to prevent burning.
  5. Bring to a gentle boil, then reduce heat and simmer for 25 to 30 minutes, stirring occasionally. Add pectin if using according to package instructions.
  6. Test jam by placing a spoonful on a chilled plate; if it wrinkles and doesn’t flood back, it’s ready. If too runny, cook a few minutes longer.
