Ingredients

Scale
  • 1.5 pounds sirloin or chuck steak tips, trimmed and cut into bite-size pieces
  • 1/2 cup bourbon whiskey
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • Olive oil or neutral oil for grilling
  • Freshly ground black pepper and kosher salt for seasoning

Instructions

  1. Make the Bourbon Glaze: In a medium mixing bowl, whisk together bourbon, soy sauce, brown sugar, Dijon mustard, and minced garlic until sugar dissolves. Set aside.
  2. Prepare the Garlic Butter: In a small bowl, combine softened butter, finely minced garlic, chopped parsley, salt, and pepper. Mix well, cover, and refrigerate until ready to serve.
  3. Season the Steak Tips: Pat steak tips dry with paper towels. Drizzle lightly with olive oil, then season generously with salt and freshly ground black pepper. Toss to coat evenly.
  4. Preheat the Grill: Heat grill to medium-high (about 400°F). Oil the grates lightly to prevent sticking.
  5. Grill the Steak Tips: Place steak tips on the grill in a single layer. Grill about 3 minutes per side, turning once, to get a nice char. Brush bourbon glaze on steak tips during the last 2 minutes of grilling, flipping and glazing twice to build a sticky, caramelized coating. Aim for medium-rare (130°F internal temperature) or cook longer as preferred.
  6. Rest the Meat: Remove steak tips from grill and transfer to a plate. Let rest for about 5 minutes to allow juices to redistribute.
  7. Serve with Garlic Butter: Dollop or brush garlic butter generously over warm steak tips just before serving.

Notes

Pat steak tips dry before seasoning to ensure good browning. Brush glaze only during the last 2 minutes of grilling to avoid burning the sugar. Let meat rest after grilling for juicy results. Garlic butter adds richness and aroma—don’t skip it. For gluten-free, substitute soy sauce with tamari or coconut aminos. For dairy-free, replace butter with dairy-free margarine or coconut oil. If glaze thickens too much, thin with water or extra bourbon before brushing.
