  • 1 cup fresh blueberries (150 g)
  • 1 cup fresh strawberries (150 g), hulled and sliced thinly
  • 1 medium banana, sliced (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line your baking sheet with parchment paper to prevent sticking.
  2. In a medium bowl, whisk together 2 ยฝ cups (300 g) of flour, 1 teaspoon baking powder, and ยผ teaspoon salt. Set aside.
  3. In a large bowl, use an electric mixer to beat 1 cup (227 g) softened unsalted butter with 1 cup (200 g) granulated sugar until light and fluffy, about 3 minutes.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. Form the dough into a disk, wrap in plastic, and chill in the fridge for at least 30 minutes.
  7. On a lightly floured surface, roll the dough to about ยผ inch (6 mm) thickness. Use a mini cookie cutter (2 to 3 inches diameter) to cut out cookies. Re-roll scraps and repeat.
  8. Place cookies on the prepared baking sheet about 1 inch (2.5 cm) apart. Bake for 8-10 minutes or until edges are just golden.
  9. Transfer cookies to a cooling rack and let them cool completely before frosting.
  10. Beat together 8 oz (225 g) softened cream cheese, 1 cup (120 g) powdered sugar, ยฝ teaspoon vanilla, and 2 tablespoons heavy cream (if using) until smooth and spreadable.
  11. Spread a thin layer of cream cheese frosting on each cookie.
  12. Arrange blueberries in the top-left corner to form the ‘star’ section of the flag.
  13. Use sliced strawberries to create the red stripes horizontally across the cookie.
  14. If desired, add banana slices or leave white space between strawberry stripes for the white stripes.
  15. Serve immediately or chill for 30 minutes to let flavors meld.
