  • 2 medium English cucumbers, thinly sliced
  • 8 ounces crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 small garlic clove, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill or mint, finely chopped
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • Toasted pine nuts or walnuts for garnish (optional)

Instructions

  1. Wash and slice 2 medium English cucumbers into thin rounds, about 1/8-inch thick. Pat dry with a paper towel to remove excess moisture.
  2. In a food processor or blender, combine 8 ounces crumbled feta, 1/4 cup plain Greek yogurt, 1 minced garlic clove, 2 tablespoons fresh lemon juice, and 2 tablespoons extra virgin olive oil. Blend until smooth and fluffy, about 1-2 minutes. Add a teaspoon of water or extra olive oil if too thick.
  3. Season the whipped feta with freshly ground black pepper and a pinch of salt if needed. Blend briefly to mix. Add a pinch of red pepper flakes if desired.
  4. In a bowl, gently toss the cucumber slices with 2 tablespoons chopped fresh dill or mint, being careful not to bruise the cucumbers.
  5. Spread the whipped feta on a serving plate or shallow bowl in a thick layer or dollops.
  6. Arrange the cucumber slices on top of the whipped feta spread. Drizzle a little extra olive oil over everything and scatter toasted pine nuts or walnuts if using. Garnish with additional fresh herbs.
  7. Serve immediately or refrigerate for 15-20 minutes to let flavors meld. Enjoy chilled or at room temperature.

Notes

Pat cucumbers dry to avoid watery salad. Use fresh lemon juice for best flavor. Whip feta and yogurt until fluffy for creamy texture. Can prepare whipped feta up to 2 days ahead and add cucumbers before serving. For vegan version, substitute dairy-free feta and coconut or almond yogurt.
