  • 46 slices deli turkey (oven-roasted or honey turkey)
  • 23 slices cheese (provolone, Swiss, or cheddar)
  • 23 tablespoons cream cheese, softened
  • Salt and pepper (optional, to taste)
  • Fresh spinach or lettuce leaves (optional, for added crunch)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20 minutes or microwaving for 10-15 seconds until spreadable.
  2. Lay one large flour tortilla flat on a cutting board. If cold, warm in the microwave for 10 seconds to make it pliable.
  3. Spread a thin, even layer of cream cheese over the entire surface of the tortilla, going all the way to the edges.
  4. Place 4-6 slices of deli turkey evenly over the cream cheese, overlapping slightly to avoid gaps.
  5. Lay 2-3 slices of cheese over the turkey, leaving a 1-inch border at the top edge of the tortilla.
  6. If using spinach or lettuce, add a single layer of completely dry leaves over the cheese.
  7. Starting from the edge closest to you, roll the tortilla tightly away from you, tucking and pulling as you go. Press gently to seal the bare edge.
  8. Wrap the rolled tortilla seam-side down in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Refrigerate for at least 15-20 minutes (or up to overnight).
  9. Unwrap the chilled roll and place it on a cutting board. Using a sharp serrated knife, slice into 1-inch thick rounds using a gentle sawing motion.
  10. If packing for lunch, insert a toothpick through each pinwheel to keep it from unrolling.

Notes

For best results, use room-temperature cream cheese and chill the roll thoroughly before slicing. A serrated knife with a gentle sawing motion gives clean cuts. Avoid overfilling to prevent the roll from falling apart. These can be made the night before and taste even better the next day.
