  • 1 can (15 oz) chili (no beans or with beans)
  • 1 can (8 oz) tomato sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon liquid smoke (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped green onions
  • 1/2 cup diced onion (optional, sautéed)
  • 1/4 cup pickled jalapeños (optional)
  • 1 can (15 oz) black beans, drained (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Slice hot dogs into 1-inch rounds. Optionally, brown them in a dry skillet over medium-high heat for 3-4 minutes.
  3. In a mixing bowl, combine chili, tomato sauce, smoked paprika, liquid smoke (if using), garlic powder, onion powder, salt, and pepper. Stir well.
  4. Spread hot dog pieces evenly in the prepared dish. Pour chili mixture over the top, covering all hot dogs.
  5. Sprinkle cheddar and Monterey Jack cheese evenly over the chili mixture.
  6. Bake uncovered for 20-25 minutes, until cheese is melted and bubbly. For a crispier top, broil for the last 2 minutes.
  7. Let casserole rest for 5 minutes before serving.
  8. Garnish with chopped green onions and serve hot.

Notes

For best results, use thick chili and freshly shredded cheese. Let casserole rest after baking to set. Can be assembled ahead and refrigerated up to 24 hours before baking.
