Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ cup pumpkin puree
  • ½ cup granulated sugar
  • ⅓ cup vegetable oil
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Optional: ¼ cup chopped walnuts or pecans
  • Optional: 2 tablespoons white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a mini-muffin tin by greasing lightly or lining with liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until uniform.
  3. In a separate small bowl, whisk together pumpkin puree, sugar, oil, egg, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined; do not overmix.
  5. Fold in optional add-ins like nuts or chocolate chips if using.
  6. Divide batter evenly among muffin cups, filling each about ¾ full.
  7. Bake for 15-18 minutes for mini muffins or 18-22 minutes for standard muffins, until a toothpick inserted comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure eggs are at room temperature for better emulsification. Do not overmix the batter to avoid tough muffins. If using fresh pumpkin, strain excess liquid. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
