  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (optional)
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Soft hamburger buns or brioche buns for serving
  • Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions

  1. In a mixing bowl, combine 1 cup BBQ sauce, 2 tablespoons apple cider vinegar, 1 tablespoon honey, 1 teaspoon smoked paprika, and a pinch of salt and pepper. Stir well to blend.
  2. Finely chop 1 small yellow onion and mince 2 garlic cloves. Place the chicken breasts or thighs at the bottom of the slow cooker.
  3. Scatter the chopped onion and minced garlic evenly over the chicken.
  4. Pour the BBQ sauce mixture over the chicken and onions, coating everything evenly. Do not stir.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is tender and shreds easily.
  6. Remove chicken from slow cooker and shred with two forks carefully as it will be hot.
  7. Return shredded chicken to the slow cooker and stir to coat with sauce. Let sit on warm for 10 minutes to absorb flavors. If sauce is too thin, cook uncovered on HIGH for 15-20 minutes to thicken.
  8. Assemble sandwiches by spooning pulled chicken onto buns and adding optional toppings like coleslaw, pickles, or jalapeños.
