A hearty and flavorful one-pan meal featuring browned bratwurst, caramelized onions, and tender cabbage simmered in beer. This quick and easy Oktoberfest-inspired skillet dinner comes together in about 35 minutes and is perfect for fall weeknights.

  • 4 links bratwurst (about 1 pound), uncooked
  • 1 medium head green cabbage (about 2 pounds), sliced into 1-inch wedges then cut into 2-inch pieces
  • 1 large yellow onion, sliced into thin half-moons
  • 3 cloves garlic, minced
  • 1 cup lager or Oktoberfest-style beer (e.g., Spaten Oktoberfest or pilsner)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon caraway seeds (optional)
  • 1 tablespoon Dijon mustard, plus more for serving
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients first: Slice the cabbage into 1-inch thick wedges, then cut those wedges crosswise into 2-inch pieces. Slice the onion into thin half-moons. Mince the garlic. Chop the parsley.
  2. Brown the bratwurst: Heat 1 tablespoon of olive oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat. Prick each bratwurst link a few times with a fork. Add them to the hot skillet and cook for about 4-5 minutes per side, until deep golden brown all over. Remove the bratwurst to a plate and set aside (they will not be fully cooked through).
  3. Cook the onions: Reduce the heat to medium. Add the sliced onions to the skillet with the rendered fat. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Cook the onions for about 5 minutes, stirring occasionally, until soft and starting to turn golden.
  4. Add the garlic and caraway: Stir in the minced garlic and caraway seeds. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  5. Add the cabbage: Add the sliced cabbage to the skillet. Stir everything together. Cook for about 5 minutes, stirring occasionally, until the cabbage starts to wilt and soften.
  6. Deglaze with beer and vinegar: Pour in the beer and apple cider vinegar. Stir in the Dijon mustard. Bring the liquid to a simmer. Use your wooden spoon to scrape up any remaining browned bits from the bottom of the pan.
  7. Return the bratwurst: Nestle the browned bratwurst back into the skillet, pushing them down into the cabbage mixture. Cover the skillet with a lid or foil. Reduce the heat to low and let it simmer for 15-20 minutes, until the bratwurst is cooked through and the cabbage is tender.
  8. Finish and serve: Remove the lid. Taste the cabbage and adjust the seasoning with salt and pepper. Slice the bratwurst on a bias into thick pieces, or leave them whole. Sprinkle with fresh parsley and serve with extra Dijon mustard on the side.

Notes

Do not skip browning the bratwurstโ€”it creates deep flavor. Use a mild lager or malty Oktoberfest beer; avoid hoppy IPAs. Let the skillet rest for 5 minutes before serving to meld flavors. Leftovers keep in the refrigerator for up to 4 days and taste even better the next day. Reheat in a skillet with a splash of water or broth. Freezing is not recommended as cabbage can become mushy.
