A quick and easy one-pan garlic butter chicken breast with sun-dried tomatoes that delivers buttery richness and tangy tomato sweetness, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken breasts, pounded to even thickness
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil (preferably extra virgin)
  • 3 tablespoons unsalted butter
  • 4 large garlic cloves, minced finely
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • ¾ cup chicken broth
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme (optional)
  • ¼ cup grated Parmesan cheese (optional)
  • Chopped fresh parsley, for garnish

Instructions

  1. Place chicken breasts between two sheets of parchment paper or plastic wrap. Pound to about ½ inch thickness. Season both sides generously with salt and black pepper.
  2. Heat a large skillet over medium heat. Add olive oil and 1 tablespoon butter. Let butter melt and foam but not brown.
  3. Add chicken breasts to the pan. Cook undisturbed for 4-5 minutes until golden brown and releases easily. Flip and cook the other side for 4 minutes. Remove chicken and set aside.
  4. Lower heat to medium-low. Add remaining 2 tablespoons butter. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add chopped sun-dried tomatoes and stir to combine. Pour in chicken broth, scraping up browned bits from the pan.
  6. Add thyme leaves if using. Simmer gently for 3-4 minutes until sauce reduces slightly and thickens. Adjust seasoning with salt and pepper if needed.
  7. Return chicken to the pan, nestle into the sauce, and spoon sauce over the chicken. Warm through for 2 minutes. If using Parmesan, sprinkle over chicken and cover pan for 1 minute to melt cheese.
  8. Remove from heat. Garnish with chopped fresh parsley and serve immediately.

Notes

If sauce gets too thick, add a splash of broth or water to loosen. Avoid burning garlic to prevent bitterness. Pounding chicken breasts to even thickness ensures even cooking. Use moderate heat to prevent sticking and burning.
