  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional mix-ins: ½ cup chopped walnuts, chocolate chips, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Melt the butter in a small microwave-safe bowl in 20-second intervals. Let it cool for a minute or two.
  4. Pour the melted butter over the mashed bananas. Add the sugar, eggs, and vanilla extract. Stir until well combined.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently just until the flour disappears. Do not overmix.
  6. If using mix-ins, fold them in gently with a few quick strokes.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 10-15 minutes.
  9. Cool in the pan for 10 minutes, then remove from pan and cool completely on a wire rack before slicing.

Notes

For best texture, use very ripe bananas with brown spots. Do not overmix the batter. Let the bread cool completely before slicing to prevent crumbling. The flavor improves overnight.
