Quick and fuss-free no-bake energy bites combining creamy peanut butter, hearty oats, and a touch of sweetness, perfect for lunchboxes and on-the-go snacks.

  • 1 ½ cups (135g) old-fashioned rolled oats
  • ½ cup (125g) natural creamy peanut butter
  • ⅓ cup (113g) honey
  • 2 tablespoons chia seeds (optional)
  • 1 teaspoon vanilla extract
  • ¼ cup (43g) mini chocolate chips (optional)
  • 2 tablespoons flaxseed meal (optional)
  • Pinch of salt

Instructions

  1. Measure out 1 ½ cups (135g) rolled oats, ½ cup (125g) natural creamy peanut butter, ⅓ cup (113g) honey, 2 tablespoons chia seeds, 1 teaspoon vanilla extract, ¼ cup (43g) mini chocolate chips, 2 tablespoons flaxseed meal, and a pinch of salt.
  2. In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until smooth and well blended, about 2 minutes.
  3. Add oats, chia seeds, flaxseed meal, salt, and chocolate chips. Stir until oats are fully coated and mixture is evenly mixed and sticky but manageable.
  4. If mixture is too sticky to handle, chill in the refrigerator for 10-15 minutes.
  5. Use a tablespoon or small cookie scoop to portion out the mixture. Roll each portion between palms to form 1-inch (2.5 cm) balls.
  6. Arrange bites on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
  7. Transfer set bites to an airtight container for storage.

Notes

Use natural peanut butter for best flavor and texture. Chill mixture if too sticky before rolling. Store bites refrigerated up to one week or freeze up to three months. Variations include swapping peanut butter for almond or sunflower seed butter and honey for maple syrup for vegan option.
