Easy No-Bake Mint Julep Jello Cups

A quick and refreshing no-bake dessert that combines the classic mint julep flavors with a playful jello texture, perfect for summer gatherings.

  • 2 tablespoons unflavored gelatin powder
  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) cold water
  • ½ cup (100 grams) sugar
  • About 15 fresh mint leaves, finely chopped
  • ¼ cup (60 ml) bourbon
  • 2 tablespoons (30 ml) lemon juice
  • ¼ cup (60 ml) heavy cream (optional)
  • Mint sprigs and lemon zest for garnish

Instructions

  1. Pour 1 cup (240 ml) boiling water into a medium bowl. Sprinkle 2 tablespoons of unflavored gelatin evenly over the surface. Let stand for 2 minutes to bloom, then whisk until completely dissolved and smooth.
  2. Stir in ½ cup (100 grams) sugar until fully dissolved. Pour in 1 cup (240 ml) cold water and mix well. Let cool if still too hot.
  3. Add finely chopped 15 fresh mint leaves, ¼ cup (60 ml) bourbon, and 2 tablespoons (30 ml) lemon juice. Stir gently but thoroughly to combine.
  4. Ladle the mixture into individual cups or glasses, filling about three-quarters full. Leave space if adding cream topping later.
  5. Cover loosely and refrigerate for at least 2 to 3 hours until fully set but tender to the touch.
  6. If desired, whisk ¼ cup (60 ml) heavy cream until slightly thickened and spoon or pipe a small swirl on top of each set jello cup before serving.
  7. Garnish each cup with a fresh mint sprig and a twist of lemon zest.

Notes

Bloom gelatin properly to avoid grainy texture. Avoid vigorous stirring after adding alcohol to prevent frothing. Chilling time is essential for proper setting. Freezing is not recommended as it affects texture.
