This easy Jiffy corn casserole with sour cream and cheddar is a quick, crowd-pleasing side dish perfect for potlucks, holidays, or weeknight dinners. Made with simple pantry ingredients, it comes together in just 10 minutes of prep and bakes into a creamy, cheesy, golden-brown casserole that everyone loves.

Ingredients

Scale
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 cup full-fat sour cream
  • 1 can (14.75 oz) creamed corn
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 ½ cups shredded cheddar cheese, divided
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs, room temperature
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. In a large mixing bowl, whisk together melted butter, sour cream, and eggs until smooth and pale yellow.
  3. Stir in creamed corn and drained whole kernel corn until evenly distributed.
  4. Add Jiffy corn muffin mix, salt, and pepper. Stir gently until just combined (a few lumps are fine).
  5. Fold in 1 cup of shredded cheddar cheese. Reserve remaining ½ cup for topping.
  6. Pour batter into prepared baking dish and spread evenly with a spatula.
  7. Sprinkle reserved ½ cup cheddar cheese evenly over the top.
  8. Bake for 35-40 minutes, until edges are golden brown and center is set (toothpick inserted in center comes out clean or with a few moist crumbs).
  9. Remove from oven and let rest on a cooling rack for 5-10 minutes before serving.

Notes

Don’t overmix the batter; a few lumps are fine. Let eggs come to room temperature for best results. If top browns too quickly, tent with foil for last 10 minutes. Resting 5-10 minutes before serving is essential for clean slices.
