  • 1/4 cup (60 ml) heavy cream
  • 2 tablespoons (30 g) pumpkin puree (100% pure, not pie filling)
  • 1 to 2 tablespoons (15 to 30 ml) vanilla syrup
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 cup (240 ml) milk of your choice (whole milk or oat milk recommended)
  • 1 to 2 shots (2 to 4 ounces or 60 to 120 ml) espresso or strong brewed coffee
  • Ice (enough to fill glass)

Instructions

  1. Chill your mixing bowl and whisk (or hand mixer beaters) in the freezer for about 10 minutes.
  2. In the chilled bowl, combine heavy cream, pumpkin puree, vanilla syrup, pumpkin pie spice, and a pinch of salt. Whisk vigorously by hand or use a hand mixer on low speed, gradually increasing to medium-high, until soft peaks form (about 2-3 minutes with a hand mixer, 5-7 minutes by hand). Do not over-whip.
  3. Brew 1 to 2 shots of espresso or about 1/2 cup of very strong coffee. Let it cool slightly.
  4. Fill a glass about three-quarters full with ice.
  5. Slowly pour milk over the ice, filling the glass about two-thirds full, leaving about 1.5 inches of space at the top.
  6. Gently pour the brewed espresso or coffee over the milk. Do not stir.
  7. Using a spoon, gently dollop the pumpkin cream cold foam on top of the coffee, spreading it evenly.
  8. Optional: Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top, or drizzle with vanilla syrup.
  9. Serve immediately. Stir gently with a straw if desired, or sip through the foam.

Notes

For best results, ensure cream, bowl, and beaters are well-chilled. Strain pumpkin puree if lumpy for smoother foam. Adjust sweetness to taste by varying vanilla syrup. The foam is best fresh but can be stored in the fridge for up to 24 hours; re-whip before using. For a hot latte, skip the ice and pour hot milk and coffee into a mug, then top with cold foam.
