  • 1 1/4 cups (150g) all-purpose flour (can substitute whole wheat or almond flour for gluten-free)
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons (60g) unsalted butter, cold and cubed
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 23 tablespoons cold water
  • Optional: pinch of smoked paprika or cayenne
  • 8 ounces (225g) sliced deli turkey breast (low sodium, nitrate-free preferred)
  • Optional: fresh spinach leaves or thinly sliced cucumbers
  • Small handful of baby carrots or cherry tomatoes
  • Optional: small container of hummus or mustard for dipping

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt.
  2. Add cold, cubed butter and cut into the dry ingredients using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized bits of butter.
  3. Fold in shredded sharp cheddar cheese.
  4. Add 2 tablespoons cold water and stir gently; add more water one teaspoon at a time if dough is too dry, until it just comes together. Avoid overworking.
  5. Shape dough into a disk, wrap in plastic wrap, and refrigerate for at least 20 minutes.
  6. Preheat oven to 350ยฐF (175ยฐC). Roll chilled dough on a lightly floured surface into a rectangle about 1/8 inch (3mm) thick.
  7. Cut dough into 1.5-inch (4cm) squares using a sharp knife or pizza cutter.
  8. Place squares on a parchment-lined baking sheet spaced about 1/2 inch apart. Prick each cracker with a fork.
  9. Bake for 15-18 minutes until golden and crisp, rotating pan halfway through baking.
  10. Cool crackers on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Assemble lunchable by layering cheddar crackers with sliced turkey and optional spinach or cucumber slices.
  12. Pack with baby carrots or cherry tomatoes and optional hummus or mustard for dipping.

Notes

Keep butter cold to ensure flaky crackers. Chill dough before rolling to prevent spreading. Rotate baking sheet halfway for even cooking. If crackers are soft after baking, reheat in oven for a few minutes. Store crackers separately from moist ingredients to keep crisp. Can be made ahead and stored in airtight container for up to 3 days or frozen for up to a month.
